Esta investigación se elaboró en el marco del enfoque de la investigación acción educativa y su correspondiente metodología. Los actores involucrados en este trabajo son 18 niños de cuatro años y tres docentes practicantes. Los instrumentos que se utilizaron para recoger y procesar los datos fue una ficha de observación aplicada a los estudiantes, diarios de campo y registros fotográficos. Los resultados obtenidos muestran una mejora significativa en relación con los hábitos alimenticios tras la implementación de biohuertos escolares. Al término de la intervención pedagógica, se concluye que el uso del biohuerto escolar como recurso pedagógico ayudó de manera notable a que los estudiantes adopten conductas alimentarias y hábitos saludables. Al intervenir directamente en la siembra y cosecha, los niños aprenden a valorar los alimentos naturales y nutritivos; este conocimiento trasciende su dieta personal y guía también las opciones alimentarias en sus propias familias.The primary objective of this research was to improve the eating habits of four-year-old children at the Los Incas No. 097 Educational Institution in Jaén through the use of school vegetable gardens. The study was conducted within the framework of the educational action research approach and its corresponding methodology. The participants included 18 four-year-old children and three student teachers. Data collection and processing involved the use of student observation forms, field journals, and photographic records. The results show a significant improvement in eating habits following the implementation of the school vegetable gardens. Upon completion of the pedagogical intervention, it was concluded that using the school garden as a teaching resource notably helped students adopt healthy eating behaviors and habits.
